Saffron or "red gold" is above all a variety of flower Crocus, a pretty blue flower with yellow orange stigmas that will become this spice coveted.
This spice has its origins in ancient times in India it was introduced in France probably in the eleventh century. We found it for medicinal and culinary virtues or even aphrodisiac.
Our saffron is grown in Picardy in a small farm that produces only a few grams of saffron annually.
Saffron leaves in the mouth a very subtle taste that it is necessary to tame. It's a great flavor enhancer according to the use that is made.
Safran marries well with white wines and champagne, soups, sauces and desserts.
A little tip, use the Safran that stigma to be sure of its authenticity.
